ANSWER : Pretty much nothing else you can do except try another new cartridge. I had 2 identical HP printers once in the shop. One of them didn’t like one of the cartridges. I swapped it over with the other printers cartridge and it was happy. So was the other printer. Swapped the cartridges back and it didn’t like it again. How do you explain that? You don’t.

ANSWER : Epson inks are usually oil based where as generic in cartridges are water based. They both use dyes and pigments for the actual colouring however the formulas are obviously different.

ANSWER : The only way is to buy a chip resetter and reset the chip on the cartridge. You can find them online for about $5. You just hold it against the cartridge until the light turns green. You do run the risk of damaging the printhead due to overheating because of no ink in it.
